Sweetcorn & Sweet Potato Soup

Need a pick me up, low in energy, sugar cravings getting the better of you?

Craving sugar, can be your bodies way of saying – Hey I’m tired/I’m running low on energy/what a week I’ve had! Instead of criticizing your cravings, listen to them. I am a big believer the body is always trying to communicate to us, it’s just our listening skills that over time become skewed. The voice of what’s on trend is strong and tempting, but the wisdom of food, mother nature & our intuition never fails if we learn to tune inwards.

So after a hectic couple of months, and tapping into my adrenaline resources I took a week to restore. This doesn’t necessarily mean I stayed in bed all day, (although I did take longer sleeps and enjoyed every minute of duvet time), I also did a lot of cooking (and eating), spent time in nature, gentle movements, baths & other tools I have come to learn replenish me. So after a few days of low stock in the fridge, I came to my last few ingredients and realised they were the perfect combo to create a recipe that soothes the insides, is easy on the stomach and packed with energy to get me back on track.

After just 2 bowls of my Sweetcorn & Sweet Potato soup I couldn’t believe how my energy levels received a much needed boost! The sweetness of the soup working its magic to help relax my muscles, the flavours satisfying my cravings, each spoonful a tonic for my body. By the afternoon I could feel I was ready to up my productivity a little. This week, I’ve allowed my body to find its own way back and ever so slowly it has, a reminder for me of how amazing food truly can be. There are a multitude of ways to feed your cravings, to hit that sweet spot, to restore your energy – sugar is just one, but for many there is the low after the high, which can bring with it a suitcase worth of guilt.

What you Need:

  • 1/2 white onion, finely diced
  • 2 Organic Sweet Potato, peeled & roughly chopped
  • 2 Organice Sweet Corn (precooked/packaged or raw) – use knife to slice the corn off the cob.
  • 2 inch piece of ginger, grated
  • 1 tsp ground turmeric
  • 1 Tin of Coconut Milk
  • 1 cup of red lentils, washed 2-3 times, untill the water runs clear.
  • Homemade Stock or Organic Veggie stock cube with boiling water
  • 2 tsp butter/coconut oil/olive oil.
  • Sea Salt/Himalayan Salt
  • Pepper

What to do:

Melt a bit of butter, coconut oil in your saucepan that is big enough for soup (approx. 1 Litre)

Add the finely chopped onion and cover with a lid, stir after 30 seconds and leave for 2-3 minutes, stirring every 30 seconds until it starts to turn translucent.

Add the sweet potatoes, sweetcorn, ginger & turmeric. Reduce the heat and simmer for 3-5 minutes for the flavours to combine and the sweetness to be released from the veg. Keep covered with a lid and stir regularly.

Then add the coconut milk, washed lentils and stir to combine. Add in enough stock, so your total liquid is approx. 1 inch above the vegetables, season with salt & pepper.

Bring to the boil, reduce to simmer until the lentils are soft, Approx 20-30 minutes, add more stock if you need to. Blitz to combine. Taste for seasoning.
